Those fortunate enough to have visited the converted cottage known as the Beach Pea Baking Co. in Kittery, Maine, will attest to the excellence of its bread, the perfection of its cakes, the irresistible appeal of its cookies and muffins. These goods are the bakery's foundation. Beyond the baked goods, this special place offers generous fresh salads, an original sandwich menu, and friendly staffwho are committed to all-natural, organic ingredients and leading the community in recycling and composting. Like James Haller, chef and author of the introduction, this bakery's patrons also enjoy dining on the shady porch overlooking its blooming gardens.
Beach Pea Baking Co. presents the vision and passion of its owners, Thomas and Mariah Roberts. In this introductory collection of recipes, they share their philosophy along with the secrets to favorites such as fougasse and cowgirl cookies. The Roberts' step-by-step instructions, along with Brian Smestad's photographs, illustrate for readers the art in artisan baking.
Thomas and Mariah Roberts have been friends since age twelve. Born and raised in Portsmouth, New Hampshire, the two traveled west after college. Three years in the Sierra Nevada Mountainsskiing, hiking, biking, and, notably, cooking and bakingprepared them for the next phase of their adventure: their return home to the region they love. In 2001, in a borrowed commercial kitchen, they began baking for local farmers' markets. In 2002, they opened the doors of Beach Pea Baking Company, which instantly became a mainstay of the Seacoast. In 2003, they married. Together they live their commitmentsto health, to community, to sustainability, and, of course, to baking.
Brian Smestad was drawn to the art of photography at age twelve, and by twenty-two his first book was published. His passion for photography and his enthusiasm for travel have carried him around the world. Smestad works in medium format using a Hasselblad, and currently lives in New England.
